Collard greens are high in indole-3-carbinol, a potent anti-estrogen. Collard greens are a cruciferous vegetable. Like kale, mustard greens, broccoli, Brussels sprouts, and cabbage, collard greens are rich in sulforaphane, which has anti-cancer properties.
- 1 large bunch of collard greens
- 1/2″ ginger
- 1 lemon w/rind
- 4 carrots
You may want to add an apple for sweetness.
